Newbie here and here's my scenario

I want to spread this tournament over two days, so I would like to play 3 or 4 rounds on late Friday afternoon, then finish up the following Saturday, early enough so that teams can get back on the road.

It's a weird set-up, but 3 courts only, so that the players have breathing room while playing (volleyball).

If you really want to help, consider the following:  1 team is choosing not to play 2 of the other teams, as we will see them in league anyway.  So I would like to see if we could have those 2 matches at the end of the tourney.  I know it's odd, but the coach just wants to play the other teams that I have coming.

I think the schedule below should work.  In the first part above the dashed line, each team gets exactly 3 games.  Then in the second part, if team A is not going to play teams B and C, then leave out (A C) and (A B) at the end.

(E G) (D H) (C F)
(B E) (A F) (C D)
(A G) (C E) (B H)
(F H) (A D) (B G)
------------------
(B F) (D G) (C H)
(A E) (G H) (B C)
(E F) (B D) (A H)
(D F) (E H) (C G)
(D E) (F G) (A C)
(A B) (---) (---)
