First of all I salute the entire community of this forum.
Now the question:
How can I organize a tournament of Mahjong of 32 players using 8 tables?
I am looking for a 10 round format where no person plays with or against another person twice.

Use the schedule for 32 golfers that you can find near the bottom of Ed Pegg's social golfer page (https://web.archive.org/web/20120503232317/http://www.maa.org/editorial/mathgames/mathgames_08_14_07.html).
If your tournament grows a little, then the 36 player schedule in 11 days that is missing from Ed's page can be found here on this message board.

There is a link on the social golfer page to a paper in the journal Discrete Mathematics by Hao Shen and Jiaying Shen - this is the method for the 32 golfer schedule. The 36 player schedule I found using a computer search, it's a cyclic design so the first round defines all the other rounds.
